当たり前のことですが、食材が無いと料理人の仕事は成り立ちません。だからこそ、生産者さんへは敬意を払っています。生産者さんから受け取った食材というバトンをどうやってお客様の記憶に残るものにするかが僕にとってとても大事なこと。
